Kerala Style Achinga PayarThoran – Thoran or Long beans stir fry with grated coconut is a side dish of rice.It is very simple to make.This is a special item in feasts of Kerala.Do try this and enjoy .
|Long beans/Payar||1 bunch/1/4 kg|
|Grated Coconut||¼ cup|
|Green chilly||2 to 3 Nos, finely chopped|
|Cumin seeds||a pinch|
|Onion||1, medium, chopped|
|Turmeric powder||a pinch|
|Mustard seeds||½ teaspoon|
|Coconut oil||as required|
|Dry red chillies||2 Nos|
|Curry leaves||1 sprig|
Wash the beans thoroughly.
Chop finely and keep aside.
In a mixer, add grated coconut, garlic, cumin seeds, and green chilly and grind coarsely.
Heat oil in a pan, add mustard seeds wait till it splutters.
Add curry leaves and dry red chilly to this. Add chopped onion and sauté till it become translucent.
Add in ground coconut mixture and stir for 1 minute.
Add chopped beans, turmeric powder and salt to this.
Combine well, sprinkle one table spoon of water.
Close the lid and cook for few minutes on a low flame.
Remove the lid and stir the thoran until the water evaporates.
Turn Off the flame and serve hot with rice.
Tasty payaru thoran is ready.
